Split Pea Soup in an Instant Pot
Ingredients:
1 tablespoon olive oil
1 onion, diced
2 carrots, diced
2 celery stalks, diced
1 ham bone or hock
1 pound dried split peas
6 cups chicken or vegetable broth
2 bay leaves
1/2 teaspoon thyme
1/4 teaspoon salt
1/4 teaspoon pepper
Directions:
1. Turn on the Instant Pot to the "Sauté" setting. Add the olive oil and onion and cook, stirring occasionally, until softened, about 5 minutes.
2. Add the carrots, celery, ham bone, split peas, broth, bay leaves, thyme, salt, and pepper. Stir to combine.
3. Close the lid of the Instant Pot and make sure the valve is set to "Sealing." Cook on high pressure for 15 minutes.
4. Allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
5. Remove the ham bone from the soup and discard. Shred the meat from the bone and return it to the soup.
6. Serve hot.
